
We were in Maui last month, and boy did I eat a lot of fish! I think I had mahi mahi 6 out of 8 days. (Ono and Opah were also constants on my menu.) But interestingly (or maybe not so for people who know me), one of my favorite meals was a salmon dish.

It was cooked to perfection in a gingery soy glaze and accompanied by sticky white rice with black sesame seeds mixed in and a heap of tropical salsa. Between the texture of the rice and the avocados in the salsa, I was reminded of my preferred sushi order and have wanted to create a deconstructed sushi dish since!
I got my chance on Monday, when I had to come up with this month’s Recipe Redux for Revive.

The dish was also largely inspired by my love for mixing miso soup mix with sour cream or greek yogurt as an alternative to onion dip!
